...'Many believe that yoghurt originated in Bulgaria and it has been a key ingredient in diet of many of the inhabitants of the Bulgarian lands going way back to the Thracians (c1500 B.C.).
It is thought that yoghurt was "invented" when the sheep’s milk was put into lambskin bags, which the ancient Bulgarians carried on their person. The warmth of their bodies cause the milk to ferment and form yoghurt, albeit that it was somewhat different to today's yoghurt.
The Youghurt that we know today contains the bacteria , Lactobacterium bulgaricum,- Dediacted to the Ancient Bulgaria that discovered it… '...
Now anyone who knows me and my very South Indian love for Yoghurt/Curd/Dahi/Moru….knows im in absolute heaven…yea im the weird one that orders the Dahi Idli on the menu, and I am capable of writing an ‘Ode to my mother’s curd rice’ and I can go on for hours about the subtle nuances of the tasteful ‘tadka’ on a well made Gujrati kadhi or Tamil Moru Curry……….
I have successfully increased my yoghurt repertoire after arriving here…to include Arjan (Airyaan) a buttermilk type drink very similar to Indian chaas, Tarratora…a refreshing cucumber and youghurt cold soup and a volley of thick yogurt based salads that are a thicker version of Indian raitas but with a distinct Bulgarian touch…..
Ah… , Lactobacterium bulgaricum…..
